

Everyone who knows me well knows how much I love my Grandma. She has been such a light and support in my life and I love her to pieces! She has inspired me to live my homestead dreams and has taught me a lot along the way!
She was raised in a time that was so much simpler than our lives now. I crave that simplicity for my family so much!
When ever we go to Grandma and Grandpa’s (a REAL farm) Grandma ALWAYS has yummy baked treats for us. I used to think it was just because we were coming or because of Grandpa’s sweet tooth, but now I realize it’s because there is such a sense of joy and satisfaction that comes from making food from scratch and feeding your family something that they love. It really is about “baking with love”.
I love this Zucchini bread recipe for several reasons…
- It’s Grandma’s recipe
- It’s dang delicious
- It makes 4 whole loaves
- It freezes VERY well
- It uses up a lot of zucchini from the garden
- My kids LOVE it
If you follow my 2:1:1 rule when your done you will have 2 loaves to eat, one to freeze, and one to share with a neighbor or friend.

Grandma's Zucchini Bread
Ingredients
- 2 Cups Sugar
- 2 Cups Brown Sugar
- 2 Cups Oil (I use vegetable)
- 4 Cups Grated Zucchini
- 6 tsp Vanilla
- 6 Eggs
- 6 Cups Flour
- 2 tsp Baking Soda
- ½ tsp Baking Powder
- 2 tsp Salt
- 2 tsp Cinnamon
- 1 Cup Nuts (Optional)
Instructions
- Pre-Heat oven to 350°
- Cream sugars, eggs, and oil
- Add zucchini
- Add vanilla
- Stir in dry ingredients, mix well
- Pour into lightly greased bread pans (4)
- Bake at 350° for 1 Hour ( I bake all 4 together)
