Grandma's Zucchini Bread

Enjoy your garden harvest all winter long! Makes 4 whole loaves and freezes very well. Great quick breakfast for those busy mornings, or a yummy after school snack.

Cook Time 1 hour hr
- 2 Cups Sugar
- 2 Cups Brown Sugar
- 2 Cups Oil (I use vegetable)
- 4 Cups Grated Zucchini
- 6 tsp Vanilla
- 6 Eggs
- 6 Cups Flour
- 2 tsp Baking Soda
- ½ tsp Baking Powder
- 2 tsp Salt
- 2 tsp Cinnamon
- 1 Cup Nuts (Optional)
Pre-Heat oven to 350°
Cream sugars, eggs, and oil
Add zucchini
Add vanilla
Stir in dry ingredients, mix well
Pour into lightly greased bread pans (4)
Bake at 350° for 1 Hour ( I bake all 4 together)
