Grandma's Zucchini Bread

Enjoy your garden harvest all winter long! Makes 4 whole loaves and freezes very well. Great quick breakfast for those busy mornings, or a yummy after school snack.

Cook Time 1 hour
Servings 4 Loaves

Ingredients
  

  • 2 Cups Sugar
  • 2 Cups Brown Sugar
  • 2 Cups Oil (I use vegetable)
  • 4 Cups Grated Zucchini
  • 6 tsp Vanilla
  • 6 Eggs
  • 6 Cups Flour
  • 2 tsp Baking Soda
  • ½ tsp Baking Powder
  • 2 tsp Salt
  • 2 tsp Cinnamon
  • 1 Cup Nuts (Optional)

Instructions
 

  • Pre-Heat oven to 350°
  • Cream sugars, eggs, and oil
  • Add zucchini
  • Add vanilla
  • Stir in dry ingredients, mix well
  • Pour into lightly greased bread pans (4)
  • Bake at 350° for 1 Hour ( I bake all 4 together)
