

Who doesn’t love a warm bowl of soup on a crisp fall evening!? When it comes to this taco soup recipe, your family will be wanting it ALL YEAR long! My husband Eric has been asking me to make it for weeks now so I thought I’d share the recipe with you in real time… I’m making this tonight!
This recipe is one I remember my mom making when I was a kid. It is so easy and can be modified to fit what your family likes. This is a great way to use what cans you have in food storage!
The real MVP of this recipe is the stewed tomatoes. If you had a bountiful tomato crop this year and were able to can up your own, it will take this recipe to a whole new level! If not, that’s ok too! Store bought stewed tomatoes are great to have on hand and in your food storage. I love having recipes that I can make with my food storage and this one totally fits the bill!
Taco Soup
Brown ground beef in a large pot. (I love using my Pioneer woman pots! They are so cute and great quality!) Drain off excess. Add beans (drained), small can of mushrooms (drained), stewed tomatoes, water, black olives, tomato sauce, and taco seasoning (if you buy in bulk I use about 3 TBSP). Warm all together on the stove, do not bring to a boil.
A few tips if I may?
- This recipe is SOOO easy to make! Why not make it a double batch and freeze half for later? That way you can throw it in the crockpot on a busy day and dinner is DONE!
- Use any beans, veggies, corn, what ever your family will like and will eat! I use pinto beans because they blend in better and my kids never notice!
- When buying your ingredients for this recipe (especially the canned stuff) instead of buying one at a time, consider buying in bulk. That way you have everything you need to make it again and you built up your food storage a little!
- If you have raised your own beef you are a rockstar! If not… consider buying your meat from a local farmer. We buy a 1/2 beef every year from a local farmer down the road. I love that were supporting our local agriculture, and knowing where our meat is coming from. No pink slime for me thanks! Yuck!

Taco Soup
Ingredients
- 1 lb Ground Beef
- 1 can Beans I use pinto but any kind you like will be fine
- 1 can Mushrooms small
- 2 cans Water 14.5 ounce cans
- 1 can Black Olives
- 1 can Tomato Sauce small
- 1 PKG Taco Seasoning
Instructions
- Add all in a large pot (Do not boil)
- Top with shredded cheese, Fritos, and sour cream
